700 like the 700 m above sea level relating to the altitude at which the Pinot Noir and Chardonnay vineyards are located, used for the production of this Classic Method of the Cusumano Winery. This "mountain sparkling wine" originates from clayey free soils that allow for optimal drainage, providing a range of complex olfactory sensations. Once harvested during the harvest, the grapes are pressed and then fermentation takes place in steel at a controlled temperature for 5 months. The wine then reports in the bottle as is standard practice for the Classical Method and finally ages for 36 months on the lees.
Characteristics of this wine Classic Method of Cusumano
It has a straw yellow color and a fine, persistent perlage. The olfactory notes recall berries and flowers as well as typical hints of bread crust and yeasts. On the palate it is harmonious, refined, with a long and persistent sip.
