A wine able to express the floral essence of the Siculo territory from where it comes. The grape variety used for its vinification is 100% pure Sauvignon Blanc. The provenance falls in the area of Western Sicily within the territory within which the company operates. The harvest takes place in August. The vinification involves the fermentation of the must in stainless steel tanks in order to preserve the freshness and minerality of the grapes. It follows the aging of the wine which also develops in steel, and then a further six months in bottle.
Characteristics of this Sauvignon Blanc
The appearance of the wine is pale straw yellow. The scent leaves herbaceous and vegetal aromas of green pepper, tomato leaf and mown grass. The taste has intense fruity notes that bring to mind exotic fruits such as pineapple and banana, and those floral reminiscent of elder, broom and hawthorn.
Suggested pairings tasting this Sicilian white wine
With hot and cold fish appetizers even steamed, it is undoubtedly one of the best combinations with sushi and sashimi, magnificent with tartare-carpaccio fish, oysters, but also with white meat and fried or grilled mushrooms. It goes well with all aromatic preparations containing tomatoes, zucchini and peppers. The optimal serving temperature is 10°C in a high and wide glass.
