The Terre di Chieti "Cococciola" of Tenuta Ulisse is produced with 100% Cococciola grapes, grown in the vineyards located near Crecchio, Chieti. After manual harvesting, the bunches are carefully selected and placed in the cooling tunnel for a sudden reduction of temperature: this causes the skin to cryomacerate and consequently the extraction of the aromatic components. The wine is then destemmed, pressed and slowly fermented. The aging begins in steel tanks and ends in the bottle.
