This wine is the best way in which Colterenzio winery express the local tradition. Its vinification involves only 100% pure Schiava grapes. The origin is that of classic Alto Adige, within which the company operates. The soils are characterized by conspicuous moraine deposits-sandy mixed with porphyry gravel, the ideal base for this Schiava. Vinification involves alcoholic fermentation in steel at about 25°C with a controlled temperature and immediately followed by malolactic fermentation. After 4 months in concrete tanks, the wine is bottled in spring.
Schiava Menzen’s features
An intense ruby red color. Scent is characterized by a fresh aroma and notes of violet and black cherry softened by tannins. Taste is gentle and soft, elegantly fresh and velvety in the tannic texture of excellent persistence.
Suggested food pairings with this Schiava Menzen wine
A wine particularly suitable for light first courses, hot and cold appetizers and for typical South Tyrolean dishes such as Speck and sweet cheeses. Excellent with fish. The optimal serving temperature is 12°C in a high and wide wine glass.
