This wine which is honored by the Alto Adige DOC certification and it is produced by the Hofstätter winery is made by a local and traditional vine which is the Cabernet. The cultivation soil is clay which give structure to the wine. The grapes are destemmed after a short period of maceration and then the must ferments for 10 days under temperature control. During the fermentation, the must in on contact with the peels while at the end the temperature get hotter to have best performance in the colors and in the smell. This wine comes from the Termeno and Cortaccia vineyards and this vine is present on this territory since more than one century. It must mature in steel to become deeper, typical and structured.
Characteristics of this Cabernet wine
It has charged ruby red color with fruity aromas very warm and matures. The taste is strong, dry with a wild and terroir aroma. It Is tannic, and very persistent.
Raccomanded pairings while tasting this white wine
The Cabernet is a meal wine but it is perfect with roasted meats. If aged it can be matched with more structured courses. It must be served in a Ballon wine glass at the room temperature.
