A sensational wine with the IGT Toscana certification. The vines used are mostly Sangiovese, then there are little percentages of Merlot and Cabernet Franc. The cultivation territory is located in the Montalcino hills at 300-450 meters above the sea level. The expositions are South-east and South-west. The soil has limestone and clay. The cultivation method used is the cordon spur pruning and the density is 7000 trees per hectare with a profit of 63 hl per hectare. The manual picking takes place in the half of September and the grapes are put in 17 kg boxes. It follows the cold pre-fermentation maceration and it follows the fermentation in steel tanks. The malolactic fermentation takes place in steel tanks too. Finally there is the aging period of 12 months in oak barrels.
Characteristics of the Rubio of the San Polo winery
It has a bright ruby red color with purple reflections. The smell is quite fruity with cherry, violet and black currant aromas followed by spicy hints. It is well structured and balanced, with pleasent tannins and a great aromatic persistence. The taste has berries and cherries aromas typical of the variety which make the wine very drinkable with a wonderful intensity and elegance.
