The denomination of this wine is the Rosso di Montalcino DOC. It is used 100% Sangiovese grapes and the production area is the Montalcino one in particular the “Podernovi” zone where the winery owns around 3 hectares of soil. These are located at 450 meters above the sea level and they are exposed at South, South-east. The soil is rich of limestone and clay and the cultivation method is the cordon spur pruning. The density is 7000 trees per hectare and the profit is 49 hectoliters per hectare. There is a manual picking of the grapes in the last days of September and the grapes are put in 17 kg boxes. It follows a selection and a soft pressing of the grapes. There is the fermentation which takes place in cement tanks and it follows the malolactic fermentation in tonneaux of 500 liter. It follows the aging period of 12 months in French oak barrels followed by the aging period in bottle before the commercialization.
Characteristics of the Rosso di Montalcino DOC wine
It has a bright and shiny ruby red color. The smell has little fresh fruits, marasca cherry, blackberry and black cherry aromas joined by vanilla hints. It has a good intensity and fragrance. The taste is warm, soft, with balanced tannins. The taste is also dry, energetic and fresh with a good aromatic persistence.

The Rosso di Montalcino of San Polo is perfect with Tuscany courses such as the pastas or risottos with mushrooms or with truffles, pork meat, mixed grilled meats and medium aged cheeses. It must be served in a Gran Ballon wine glass at 18°C.
