Wine description
A wine that is the result of the expert vinification by the technicians of Fontanafredda of white Moscato grapes. The vine that has made the producer famous in the world. The production area is that of Santo Stefano Belbo. The vinification foresees that the harvested grapes are partly put directly into the presses and partly, after having been destemmed, it is started in a thermo-conditioned tank, where it stops for about 12 hours at a temperature of 5°C undergoing a short cryomaceration. A very delicate pressing program allows to extract from the berries only the must that is left to settle cold, separating it from the solid part present in the must. The fermentation starts when the temperature reaches 18ºC and is stopped when the 3% of alcohol are reached. The wine is aged in stainless steel tanks at a temperature of 0ºC.
Characteristics of this Moscato d'Asti DOCG
The wine has a straw yellow color with golden reflections, full, glossy and captivating. The scent has an explosion of aromas that recall with great intensity the scent of the grape from which the wine originates. In particular, there are hints of ripe pear, white peach, honey, robinia flowers, linden and orange, sage and lemon. The taste in the mouth allows that the density appears the predominant element and infuses a feeling of fullness that balances the acidic freshness and the residual petillant of fermentation. Of very long persistence, it clearly recalls the light and the warmth of the cluster of ripe muscat just harvested.
Suggested pairings tasting this Piedmont wine
Very pleasant during the meal, it is the ideal companion of many types of desserts, even elaborate. The optimal serving temperature is 8ºC in a high and thin glass.
