Made from Sauvignon grapes. A mono-varietal wine grown within the boundaries of the farm on marly, light soils and subject to fast heating. The vinification foresees that the grapes are pressed slightly, and the skins remain in contact with the must about 8 hours before pressing. The must is then separated from the residues by natural precipitation and then left to ferment at controlled temperature. A first slight pressing follows a short maceration on the skins of eight hours, after which a second pressing is carried out that starts the fermentation. The "Michei", Hofstätter’s Alto Adige Sauvignon, is produced in this way. This sublime and enveloping wine, offers typical and varietal organoleptic sensations, highly adherent to the terroir of belonging. It offers a satisfying and generous, fresh and fragrant drink, which easily invites to the second glass.
Characteristics of Sauvignon "Michei"
The color is a pale straw yellow, with slight light green reflections and very thin. The scent before tasting is rich in olfactory hints that recall the gooseberry and elder, then also nettle and flint. The taste is fresh and mineral to the sip, it proves to be balanced, aromatic and corresponding to the nose. Good persistence.

The Sauvignon from Hofstätter is a white wine from Trentino to be combined with fish, vegetables or white meat, it is ideal to accompany asparagus with Maltese sauce. The ideal serving temperature is 8-10°C and should be served in a high and tapered glass.
