This fabulous label is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% of other grapes. The vineyards are located in the traditional area of Valpolicella, in Prognol, where the lands touch 250 meters above the sea level. The harvest is planned between the end of September and the beginning of October and it is managed manually. The stalks are eliminated and the pressing starts. The fermentation temperature is set on 25-28°C and the maceration lasts 10 days. The aging is managed in steel and in the bottle for 12 months. Malolactic fermentation completed. Natural stabilization.
Features of this venetian wine
Intense ruby red colour, enriched by intense, fruity scents that recall cherry, currant, pepper and nutmeg. The taste is fresh, dynamic, dry and persistent. Good balance due to soft tannins.
Recommended food pairings while tasting this red wine
It is excellent with the traditional dishes of Veneto, especially with cold cuts. It has to be served at 16°C in a high, wide wine glass.
