This wine represents the farmers tradition. It is a blend, composed by 65% Corvina, 30% Rondinella and 5% Molinara. The vineyards are located in the traditional area of Bardolino, above the hills of Lazise and Pastrengo. The harvest is planned between the end of September and the beginning of October and it is managed manually. The wine making considers a drying process that lasts 120 days. The soft pressing is organized in December/January. The fermentation temperature is set on 12-23°C, while the maceration, that last 35 days, is managed for the first 15 days at cool temperature. The wine is then poured into barriques, where it makes the malolactic fermentation. The aging is developed in steel tanks.
Bardolino Chiaretto Classico Rosè DOC's features
Shiny ruby peach red colour. Its perfume recalls roses, violet and red fruits. The taste expresses delicacy, balance and red fruits like strawberries and raspberries.
Suggested pairings tasting this product of Domini Veneti winery
Excellent with grilled meat, pasta, cold cuts and soft cheeses. It has to be served at 10°C in a high, wide wine glass.
