Maculan winery produces Acininobili, a sensational mouldy and sweet wine that is vinified with the rare and classy vine variety called Vespaiola. The vineyard is located in a small area on the hills of Veneto, where the volcanic soils are mainly characterized by tuff. The preparation of the grapes and of the final product considers a careful manual selection of the fruits with “Botritis cinerea” (noble mould). The long aging, managed in barriques made of Alliers oak, is followed by a further maturation in the bottle for six months.

The aspect of this wine reveals a shiny ancient yellow colour. Its perfume is intense and spicy, with hints of acacia honey, dried fruits, raisins and flint. The taste is sweet but never too much, full, elegant, structured and fabulous. The persistence is pretty long and gives to the taster an exciting experience.
Recommended food pairings while tasting this wine by Maculan winery
The best combination is with escalopes with foie gras, but the perfection is reached with a glass of this wine, served alone, in front of the fireplace. It has to be served at a temperature that swings between 10-12°C.
