The Spada Winery enriches its line of prestigious wines with this refined label capable of enclosing all the essence of local tradition. A wine of character, compact and at the same time harmonious. Result of the conscientious vinification in blend of grapes for 50% of Corvina, 20% of Corvinone, 25% of Rondinella, and 5% of Oseleta-Croatina. The origin of the grapes falls within the business areas, in the municipal territory of Verona. The fermentation requires that the grapes, selected after about thirty days of drying in a box, are placed in the follators to ferment at a controlled temperature of 22-24, after the malolactic fermentation takes place. After This wine is added in equal parts to the fresh Valpolicella to create the "El Casotto" which will be aged for at least 12 months in oak barrels. The aging of the wine then continues in the bottle, to complete this superior of excellence.
