The Ceci winery of Emilia produces this spumante Extra Dry Millesimato at 100%. After the pressing, there is the separation of the must from the marc after one hour. The fermentation is under temperature control and then the wine must rest up to December-January to clean itself from the impurities. It follows the maturation in French oak barrels and the re-fermentation occurs thanks to the natural sugars of the must.
