Spumante Alto Adige "Brut NATURE" DOC CALDARO - KELLEREI KALTERN

This wine is made with 100% Chardonnay grapes. The Kaltern winery produces this rich and fresh sparkling wine. The vineyard used is located at the feet of the Passo della Mendola at east. The soils have dolomitic and limestones origins and they are at 600 meters above the sea level. There is a soft pressing of the grapes. The fermentation takes place for the 80% in steel tank and the 20% in tonneaux. The re-fermentation took place at the beginning of April 2012 and the refinement in bottle lasts 48 months. Destemming takes place with zero dosing.

Characteristics of the Brut Nature Sparkling DOC

It has a light and bright gold color. The perlage in fine. The smell, thanks to the long resting time on the yeasts have white flower and a mineral aroma. The taste is sapid, almost salty with a lively and persistent acidity.

Suggested pairings with this Sparkling DOC

It is a meditation wine but it is also very good as appetizer with fresh and salty snacks. It is exceptional with herbs risottos. It must be served at 16°C in a high and tapered wine glass.
