The Franciacorta Brut Saten of the San Pietro farm is a perfect example of the Franciacorta sparkling wine one of the most important area in Italy for the production of this kind of wine. The Saten is made exclusively with Chardonnay grapes but it is kept in a lower pressure of 4 instead of 6. The cultivation soil has a morainic origins and the picking has a profit of 10000 kg per hectare which produces 6500 liter of wine. The grapes arrive at the cellar after maximum 2 hours. There is a soft pressing and the must is kept at 14°C with a static decantation in stainless steel tanks for 18/24 hours and it follows the fermentation under temperature control in steel tanks and in little barrels. After some pouring the wine is clarified and stabilized with the cold. In Spring time the Cuvée is created by mixing the stain and the wood aging wines. The complex permanence on the yeasts achieve the 36 months which give to the wine a strong complexity. The final dose of the Brut is 7 grams of sugar per liter.
Characteristics of the Franciacorta Satèn Brut Cuvèe
It has a bright straw yellow color with a fine and persistent perlage. The smell has white flowers aromas with a bread crust hint. The taste is soft and silky.
Suggested pairings with this Franciacorta Saten
It is perfect as appetizer or with raw red meats. But also with salads, or at the end of the meal. It must be served in a high and tapered wine glass, at 8°C
