The Amarone Riserva "Sergio Zenato" from the Venetian Zenato winery, is born only in years of excellence from the selection of the best grapes of Corvina, Rondinella and Oseleta of the oldest vines grown at Sant'Ambrogio, in the heart of the Valpolicella Classica. A wine with an extreme balance and suitable for long aging. The blend includes 80% Corvina vines to which are added in 10% of Rondinella, and 10% of Oseleta and Croatina. The specific geographical location is that of Sant'Ambrogio di Valpolicella, a hilly area with a South-East exposition. The average altitude of the land is between 300 and 350 meters above sea level. The breeding system is the classic Guyot, with an average age of 20-year-old vines. The profit per hectare reaches 80 quintals. The harvesting era falls in the first ten days of October; then follows the vinification after harvesting and manual sorting in small 5 kg boxes, the grapes are left to dry for about four months in dry and well-ventilated places. Only in January, after the natural drying process, the grapes are pressed. Slow fermentation follows for 15-20 days on the skins and aging for at least 4 years in large oak barrels and refinement in the bottle for at least a year.
