This white wine from the Sicilian Donnafugata winery comes from Sicilia DOC Grillo grapes from south-western Sicily, at the Contessa Entellina estate: the vineyards are located at an altitude of 400-500 m above sea level, on loamy clay soils strongly rich in elements nutrients. The grapes for the production of this wine are harvested between the third ten days of August and the first ten days of September, with careful care during the manual harvest. The grapes are then further selected in the cellar and following the soft pressing, the must is fermented in steel at a temperature of 14-16°C. Refinement, on the other hand, requires permanence in the tank for three months and then for another three months in the bottle.
Characteristics of this Sicilian wine
On organoleptic examination it has a brilliant straw yellow color with greenish reflections. The olfactory notes recall lavender and broom with evident citrus hints of lime and cedar. and flint on the finish. On the palate it is sapid and well structured, mineral and with good persistence.
Recommended pairings with this Sicilian white wine
To be tasted in combination with refined appetizers, sushi, sashimi and shellfish. Also excellent with vegetarian dishes and white meats. Serve at a temperature of 10-12°C in a medium-sized and high goblet.
