The red wine Fruttaio di Ca ’Rizzieri of the Rainoldi winery is a great elegant wine produced only in the best years from a selection of Nebbiolo grapes. The bunches wither on trellis at 500 meters above the sea level in the “Ca' Rizzieri” estate in a dry and windy climate. The grapes harvest takes place at the end of October and they wither until December-January to concentrate sugar and aromas in the grape. There is the pre-fermentative cold maceration under temperature control and the several reshuffling of the skins for 60 hours. The malolactic fermentation takes place naturally and ends in spring time. The bottle refinement in fresh and dark cellars lasts 1 year.
