This particular and magic red wine of the Rainoldi winery comes from a little and rocky area of the Valtellina Superiore which is extended on terraces on living rock. It is a full red, quite rugged when young, then softer and finally harmonic when aged. It is remarkable for its characteristics in the perfume and body. It is produced with Nebbiolo (Chiavennasca) in mountain towns in Valtellina, at Poggiridenti and Tresivio. The territory is exposed at south at 300 and 550 meters above the sea level. The soil is silty-sand with an acid Ph. and this characteristic together with the short deepness give a mineral and tasty taste to the wine. There is a slow maceration under temperature control with regular pumping over and punching-down. It follows the malolactic fermentation until spring time in steel tanks. Finally it starts the aging period which lasts 20 months in Slavonia oak barrels and finally in bottles for 9 months kept in fresh and dark cellars.
Characteristics of the Valtellina Superiore Inferno
For the Inferno wine are used 100% Nebbiolo grapes and the harvest takes place in the second decade of October and it is strictly made by hand. This wine is perfect to be aged because of its structure.It has an intense ruby red color. The perfume is delicate of nuts, but it is also ethereal and wide. The taste is dry, rightly tannic and very persistent.
Suggested pairings with the red wine Superiore Inferno
It is perfect with red meats and game but also with aged or blue cheeses of the local tradition. It has to be served at 16°C to be matched with cheeses and for the meat it has to be served at 18°C. The suggested wine glass is the Grand Ballon.
