This spectacular Valtellina wine is made by 100% Chiavennasca grapes which normally are called Nebbiolo. The cultivation area is in Inferno, Grumello and Fracia and the cultivation method is the Guyot. The density is 3500 trees per hectare and they are located at 400-450 meters above the sea level. The soils are sandy- lime and the profit is 60 quintals per hectare. Only the 35% of the withered grapes are selected to produce of the Sfursat 5 Stelle DOCG. The grapes harvest takes place at the end of September and the beginning of October. The grapes are left to wither and they lose the 30% of their weight. Then there is the destemming and the pressing and they rest in the cellar for the cryomaceration at 4°C for 3 days and it follows the fermentation for 12 days at 25/26°C. After the fermentation, the wine is put for 24 hours in steel and lately in French oak barrels of Allier and Nevers for 20 months to complete the alcoholic and malolactic fermentation. The wine rests in bottle 6 months before the commercialization.
Characteristics of the Sfursat 5 Stelle di Valtellina DOCG
It has a garnet color with a ripen fruits aromas of prunes and sweet spices such as the gloves and the cinnamon. The taste is balanced, rich and bodied. It is also concentrate, vigorous, intense and pleasant with an aristocratic aroma of ripen black berry and spices. It has a persistent end.
