This wine is honored by the DOP certification. The grapes used for this red wine of the Salento tradition in Puglia are 85% Negroamaro and 15% Malvasia near di Brindisi. The grapes harvest takes place in the second half of September. There is a thermos-conditioned maceration for 10 days followed by an alcoholic fermentation with selected yeasts. There is a final aging period in French oak barrels for 6 months.
