Squinzano Rosso "Il Principe" DOP Mediterranea

This is a great quality red wine produced by the Mediterranea agricultural company from Salento in the Puglia region. It is made with Negroamaro, Malvasia Nera and Sangiovese grapes. These grapes are cultivated on a fertile soil almost sandy. The wine making process starts with a period of 10-15 days for the long and slow maceration of the grapes. It follows the fermentation in tanks under temperature control at 30°C with selected yeasts. After the mechanical operation of aging called “draining” and a soft pressing the wine is bottled for the final aging.

The perfume is intense, complex, wide and spicy even if the prevalent smell is made by red fruits. The red wine “Il Principe” is considered a meal wine easy to be matched with Italian and Mediterranean main courses flavored with tasty and structured sauces.  It is very good also with meat cooked in humid. It has to be served at 18-20°C in wide wine glasses that help the oxygenation.
