The Tormaresca wine house produces the sensational IGT Salento Fichimori red wine by the synergy of two exceptional vine varieties. Negroamaro and Syrah cleverly combines themselves in order to give birth to the estate's flagship wine. The grapes selection takes meticulously place in the Maìme estate in San Pietro Vernotico in the province of Brindisi. The vinification first provides that the cold prefermentative maceration last 5 days at a temperature of 5°C. This passage allows a correct extraction of the varietal aromas, the color and the softer polyphenolic components. Racking and skinless fermentation at a temperature of 18°C follow.

Fichimori's color is an absolute purplish red, with wide violet reflections. Red fruits' perfumes such as those of cherry and raspberry accompany violet's floreal scents. The flavor is of soft and enjoyable, its taste is light and mineral followed by a fruity and fresh finale.
