From the vinification of the prestigious and refined 100% pure Arneis vine able to boast the DOCG certification that guarantees the Denomination. The vinification foresees that the grapes, just harvested, arrive in the cellar intact and is quickly crushed and gently destemmed to extract from the skin and from the outer area of the berry only the most noble and aromatic fractions. The fermentation, at controlled temperature, takes place in thermo conditioned tanks. The maceration on the skins lasts throughout the fermentation: periodic soft pumping over, with must that has, day after day, a higher alcohol content, allow to gently extract tannins and color in a gradual and selective way. Peel separation occurs only when all the sugar has turned into alcohol. The aging of the wine after it is decanted in vitrified cement vats, specially made with a cork insulation, keeps the post-temperature for a long timefermentative of about 22 C. In this way malolactic fermentation starts and ends spontaneously in a short time. The wine is placed to mature in small oak barrels and then assembled in larger barrels, which complete the evolution, refine the harmony and increase the breadth of the bouquet. The maturation plateau is between 2 and 8 years.

The appearance that is evident from the organoleptic examination is presented with a pale straw color, sometimes with a pale hint of antique gold. The scent is fruity, with a clear scent of acacia flowers, renetta apple, peach and hazelnut. The taste is fresh, fragrant, delicately mineral.

A wine that is traditionally combined with delicate appetizers but with intense flavors such as veal with tuna sauce, flans, pasta with vegetables, rice salads, stewed white meat, boiled or baked. It is an ideal companion for raw or marinated fish. The optimal serving temperature is 6 ºC in a high and wide glass.
