From the wise and conscientious vinification of 100% Nebbiolo grapes. The origin is that DOCG of the Coste di Rose is a prestigious hill exposed in the east in the municipality of Barolo, right in front of Bussia di Monforte. For the vinification, the grapes, just harvested, arrives in the cellar intact and is quickly crushed and gently destemmed to extract from the skin and from the outer area of the berry only the most noble and aromatic fractions. The fermentation, at controlled temperature, takes place in thermo conditioned tanks. The maceration on the skins lasts about 8 days, during which are carried out periodic soft pumping over, so as to allow the must to appropriate all the trace elements present and to gently extract the coloring material The aging of the wine decanted in vitrified cement vats, specially made with a cork insulation, The wine maintains a long post-fermentative temperature of about 22 ºC. In this way malolactic fermentation starts and ends spontaneously in a short time. The wine is aged first in small oak barrels, then it is assembled in traditional large Slavonian oak barrels that help to make it harmonious and balanced, increasing the finesse of the bouquet. Before being put on the market, it completes its aging in bottle for some months. Barolo reaches maturity after 4 years from harvest and the ripening plateau is between 4 and 20 years.
