The Pònkler from the Franz Haas winery is made from Pinot Noir grapes from a single vineyard located at approximately 750 metres above sea level, characterised by south and south-west exposure and soils rich in volcanic porphyry. The vines, raised in Guyot and planted with selected French clones, are grown at high density and in deliberately low yields to ensure the highest quality of the grapes. Winemaking takes place in open steel tanks, where the must ferments in contact with the skins through frequent fulling, promoting the extraction of color and aromatic components. Once alcoholic fermentation is complete, the wine undergoes malolactic fermentation in barriques and continues to be aged in wood for about fifteen months. This is followed by a long period of maturation in the bottle, which helps define complexity and balance over time.
Characteristics of this South Tyrolean wine
In the chalice it has a ruby red colour tending towards garnet. A deep, intense profile emerges on the nose, dominated by notes of ripe red and black fruits, such as raspberry and blackberry, accompanied by spicy shades of star anise and evolutionary hints of leather. On the palate, the wine stands out for its structure and fullness, with an important but constantly evolving tannic texture, well integrated into a rich and enveloping mass. The taste component also recalls light bittering and balsamic notes, while the finish is long, persistent and very elegant.

It is a Pinot Noir of remarkable structure, which finds its ideal pairing with important dishes such as red meats, braised game and roasts, but it also expresses itself very well alongside noble poultry and aged cheeses. The recommended serving temperature is around 14–16 °C, slightly cool to enhance its aromatic fineness and gustatory tension without penalizing complexity.
