Analyzing the name of this wine Le Merlettaie, we can already obtain very important and interesting information; "The offidane lacemakers, weave threads with quick and precise gestures, the last witnesses of an ancient and precious art whose origin is lost in memory and years". This wine is inspired by them, very tied to the territory in which it is produced: Offida, an ancient medieval village on the rolling hills of the Marche. Another component that makes this wine so authentic and characteristic is the grape used to make it: the pecorina grape. Yet another element linked to tradition and decidedly "rooted" in the territory. It is one of the most famous vines of the area, autochthonous and of excellent quality; The origin of the name "Pecorino", among other things, is a great curiosity and also a great mystery. Among the various hypotheses, the most likely is the one that links the name "pecorino" to the practice of transhumant sheep farming, typical of Central Italy and in particular of Abruzzo: it seems that the sheep particularly loved this grape which, ripening before the other varieties, was sweet and perfectly ripe during the period of their passage, towards mid-September. The vinification foresees the use of 100% Pecorino grapes only. The origin is the classic one of the municipality of Acquaviva Picena and Offida, province of Ascoli Piceno. The harvest takes place in manual form, during the first decade of September. The vinification takes place in white, at controlled temperature. The decanted must is then fermented in medium-sized oak barrels where it remains in contact with the fermentation lees for 6 months. The aging lasts for 3 months in bottle.
