From Bovale grapes from vineyards located at 300 m above sea level facing south, comes this white wine from the Sardinian winery Su'entu. The harvest takes place in mid-August, with careful selection of the best bunches: this is to promote natural dehydration of the grapes and wilting on the plant, to obtain a higher concentration of sugars. The bunches are harvested at night, between late September and early October: this is followed by pajama-shrinking and maceration in French oak tonneaux. The must ferments at a controlled temperature of 20-22°C and after about 15 days of maceration, soft pressing is achieved, separating the skins from the must. Final ripening of 8 months in steel.
Characteristics of this Sardinian wine
It has an intense and bright ruby red color with fruity and floral olfactory notes: purple, wild pink, currant and raspberry. On the palate it is silky, with a pleasant freshness and a fine structure.
