Wine description
ACINATICO is a red wine from the Stefano Accordini Winery, produced using the rigorous ‘ripasso’ technique, an ancient practice that consists of ‘re-passing’ or ‘bringing into contact’ Valpolicella wine with Amarone or Recioto pomace for a period of 15-20 days, during which a second alcoholic fermentation takes place: this process enriches the wine's colour, aromas and body.
Characteristics of this Veneto wine
It has a very intense ruby red colour. The bouquet is broad and evokes notes of ripe fruit, spices and tobacco. On the palate, it is full-bodied, decisive and has soft tannins.
Recommended pairings with this Valpolicella Ripasso red wine
Excellent with roast meat, braised meat, boiled meat and mature cheeses. Serve at a temperature of 18°C.
