The Cavicchioli winery of Emilia Romagna produces this sensational wine resulting from the pure vinification of Malvasia di Candia grapes. The origin of the grapes is that of the IGT territory of Emilia-Romagna. The vinification of the grapes, which are harvested in the last week of September and then vinified in white, follow the process of cryomacerating with the skins at a low temperature of 0-2°C for about 24 maximum 36 hours; the second fermentation takes place in an autoclave according to the Charmat method at a temperature of 12-14°C and for about 4-5 days.
Characteristics of this sparkling white wine
Upon organoleptic examination, the wine has a straw yellow color with golden veins and a soft white foam. The perfume has a very aromatic nose of passion fruit, mango and ginger, together with sweeter tones of butter linked by a slightly woody and mineral base. The taste on the palate is engaging and soft, lively, pleasantly effervescent but creamy, rich in buttery references and flavors of vanilla, without being cloying, so much so that it closes with an unmistakable savory vein.
