This "Bianca di Valguarnera" Insolia from the Sicilian Winery Duca di Salaparuta is produced with 100% Insolia grapes grown in central-western Sicily, near Salemi: here the vineyards enjoy a particularly favorable climate, with mild winters and spring / summer very dry. At the end of the manual harvest, we proceed with soft pressing and fermentation in oak barriques. Then it moves on to maturation in contact with the yeasts, again in barriques, for a duration of 8 months and after bottling it is left to rest in the cellar with the bottle lying down for 12 months in order to contribute to the development of the characteristic bouquet.
