This white wine from the Paololeo winery in Puglia is made exclusively from Chardonnay grapes grown in the company's vineyards in the province of Brindisi. The grapes are harvested in the early hours of the morning at the beginning of August to prevent the heat from damaging the freshness of the bunches. This is followed by destemming and crushing with cold maceration and soft pressing of the pomace. Once fermentation is complete, the final stage of ageing takes place, which requires a 4-month rest in steel.
Characteristics of this Salento wine
It has a straw yellow colour with greenish reflections. The bouquet is reminiscent of ripe yellow fruit such as peach, mango and pineapple. On the palate, it is striking for its freshness.
