This Venetian red wine from Pasqua Winery comes from a blend of Corvina, Rondinella, Corvinone and Negrara grapes coming from the eastern side of Valpolicella. After pressing and destemming, maceration is carried out on the skins for approximately 15 days, carrying out continuous pumping over and maintaining the temperature at 24-25°C. The product rests in steel until the month of February and then “recovers” on the Amarone pomace; in this phase there is a new fermentation which will give great structure to this wine and an intoxicating aroma. After a few months it is assembled and bottled in barriques, for further refinement for 2-3 months.
Characteristics of this wine from Veneto
It has a very intense ruby color and aromas of cherry, blueberry and currant but also liquorice and toasting notes. On the palate it is rich, soft and with a persistent but well-balanced tannic texture.

Try it with stewed dishes based on red meat or game; also excellent with mushroom or radicchio risotto. Serve at a temperature of 18-20°C.
