From the vinification in purity of Nebbiolo grapes from Barolo. The Borgogno winery produces this wine that is a symbol of the Italian tradition. The origin of the grapes is that of the classic area, in the city of Barolo, Langhe. The harvest takes place at the end of September and lasts until the middle of October. The vinification starts with spontaneous fermentation without added yeasts in concrete tanks for about 12 days, with temperatures starting from 22°C up to 29°C, with subsequent submerged cap maceration for at least 30 days at a temperature of 29°C. Subsequently, after racking, the malolactic fermentation is left to trigger for about 15 days at a constant temperature of 22°C. After that the wine goes into 4.500 liter Slavonian oak barrels to refine for 4 years, followed by a further 6 months of refinement in the bottle. The Barolo of the Borgogno winery is born from the union of 5 crü vineyards in Barolo: Liste, Cannubi, Fossati, Cannubi San Lorenzo, San Pietro delle viole. This is why it expresses together the elegance and power typical of Barolo di Barolo and the real Barolo of the past.
Characteristics of this Piedmontese wine
On the organoleptic examination it is expressed with a ruby red colour with garnet, slightly orange reflections. The scent on the nose reveals beautiful aromas of dried violets, notes of small red fruits and only afterwards delicate spicy hints. The taste on the palate is dry, full-bodied, characterized by an austere tannin well balanced by a certain warmth. Balsamic, it closes with a slightly astringent finish on the fruit.
