This prestigious and sweet blend is composed by 60% Corvina, 15% Corvinone, 15% Rondinella and 10% of other grapes. The vineyards are located in the traditional area of Valpolicella, in Prognol, where the lands touch 250 meters above the sea level. The harvest is planned between September and October and it is managed manually. The wine-making considers a drying process that lasts till December/January. Then, in February, the stalks are eliminated and the pressing starts. The fermentation temperature is set on 12-23°C, while the maceration, that last 30 days, is managed for the first 12 days at cool temperature. Malolactic fermentation and aging both in barrels and in bottle. Natural stabilization.
Features of this Amarone wine
