From the unmistakable territory of the Maremma Toscana comes this Vermentino Cobalto, obviously from pure Vermentino grapes. The vineyards located at 150 m above sea level enjoy soils of rich rock in rotting sandstone. In particular, the grapes used for the production of this Cobalt are the result of a careful selection of the best vineyards. Following the harvest, the grapes are pressed and then subjected to fermentation for 2 weeks at a temperature of 15°C.The vinification takes place in wood for 50%, The Commission has also decided to extend the system of VAT rates to include the following: anfora for 34% and steel for the remainder. The aging process requires a 10-month contact with the yeast in fermentation containers and the final stage of aging requires a minimum of 6 months in bottle.
Characteristics of this Tuscan wine
It has an intense and bright color and a very complex olfactory profile: in fact, it mixes fruity notes, savoury and mineral notes, as well as toasted notes and aromatic herbs. The palate is sweet, soft and with a slight note of savoury.
