This Valpolicella Superiore Ripasso red wine from Cantina Casa Lupo is made from a blend of Corvina, Corvinone, Rondinella, and other varietals. The grapes are harvested by hand in the last two weeks of September, carefully selecting the finest bunches to ensure perfect ripeness. Once fermentation has taken place, the must is macerated on the pomace of the recently drawn Amarone for approximately 15-20 days before the final aging stage. The final maturation stage involves aging in oak barrels for 18 months, followed by further bottle aging until the wine reaches optimal maturity.
Characteristics of this Valpolicella Ripasso wine
It has a very intense red color with garnet reflections; the aroma recalls red fruits but also violets and spices. On the palate, it strikes with a delicate tannic texture and pleasant fruity notes.
