Valpolicella Classico Ripasso DOC year is a red wine produced by Cantina Spada winery. It’s considered by many the “little brother” of the more renewed Amarone. Grapes used to produce it are Corvina, Rondinella, Molinara owned by Cantina Spada. Winemaking consists of a fermentation of 7-8 days in stainless steel vessels, then wine is moved in other stainless steel vessels for 1 year. Bottle refinement lasts 5 months.
Characteristics of Valpolicella Ripasso Classico Superiore
It displays a deep ruby almost garnet red, with a subtle orange vein, due to the long ageing. Bouquet is surprisingly wide and fragrant, merging ginger flavour, pepper, plum and black cherry notes. It’s complex, balanced and slightly tannic in taste.

It can be perfectly paired with white and red meat. It should be served in a wide glass at ambient temperature. We suggest to uncork the bottle some minutes before serving.
