From the 100% pure vinification of Dolcetto grapes. The origin of the vines falls within the DOC area of Alba. For the vinification, the grapes, as soon as they are harvested, are immediately taken to the cellar in order to arrive perfectly intact. Gently pressed and destemmed, it is placed to ferment in small ferments thermo-conditioned at 28-30 C. After about 4 days of maceration, the wine, not yet completely dry, is separated from the marc and ends the fermentation slowly, at low temperature, thus enhancing the particular fruity. This is followed by the aging of the wine, which is first transferred into vitrified cement vats, specially made with a cork insulation, which maintains the post-temperature for a long timefermentative of about 20 suppositories C. Malolactic fermentation is produced spontaneously and generally ends already in November. To preserve the delicate fruity aroma, reminiscent of marasca cherry, typical of the Dolcetto grape, the wine is stored and aged exclusively in concrete or steel barrels.
