This wine comes from the “Conca d’oro”, “La Groletta” and “De Buris” vineyards in the Valpolicella Classica area. This sensational Ripasso is enveloping, warm and refined and it is made with a blend of Corvina Veronese 70%, Rondinella 25% Corvinone 5% grapes. There is a manual picking at the end of September, it follows the fermentation in steel tanks for 9 days and then it is re-fermented on the Amarone lees for 12-13 days with daily pumping over. It has to refine for 15 months in Slavonia oak barrels of 65 hl and further 6 months in bottle.
Characteristics of the Valpolicella Ripasso Classico Superiore DOC
It has an intense ruby red color. The smell is rich and spicy with black pepper and withered grapes aromas. The taste is full, very intense, spicy with ripened cherry aromas.
