This is an excellent and refined wine, rich of tropical fruits and spring flowers aromas. The Valdobbiadene Prosecco Superiore Brut Santa Margherita wine is put in autoclaves for the re-fermentation where it ferments for at least 18-20 days with the help of selected yeasts at 14°-16°C. Once got the overpressure desired which is around 6 bar it has to be cool at -4°C to stop the fermentation and to help the stabilization. The cuvee is lately kept under temperature control for one month to help the natural aging with the yeasts. Once ends this step, there is the filtration and the isobaric bottling. This Valdobbiadene Prosecco Superiore DOCG is produced by Glera grapes in the central area of the DOCG Valdobbiadene. The soils are located at 200 meters above the sea level up to 500 meters. All soils have moraine origins with lots of clay. The vineyards are cultivated with the Sylvoz – Cappuccina method with a density between 3000 and 4000 trees per hectare. The harvest takes place in September.

The Valdobbiadene Prosecco Superiore DOCG is a clean sparkling wine, pleasantly fruity which reminds the renetta apple and the peach flowers but most of all the tropical fruit such as the pineapple. The taste is soft and harmonic with a vibrating freshness together with the refinement of the perlage which prolongs the aromatic sensations.

It is exceptional as appetizer together with fish snacks or delicate cheeses. Unusual matching can be the one with delicate risotto or with grilled vegetables lightly flavored. It has to be served at 8°C in high and tapered wine glasses which concentrates all the smells to the nose.
