A wine from the refined La Guardiense cellar of Campania, the result of the wise and conscientious vinification of 100% pure Fiano grapes. The origin is the classic one of Sannio Beneventano in the eastern heart of Campania. Harvest is carried out by hand in the first half of September, with the right degree of ripeness of the grapes in order to preserve the correct sugar content and balance it with the flavor. Vinification involves cryo - maceration at 8 ° C in reduction with the following soft pressing, fermentation in stainless steel, for 15 days at a controlled and constant temperature at 13 ° C. Aging for this wine takes place in the bottle.
