The Montefalco Rosso Riserva of the Petricaia winery boasts the DOC certification that certifies the Denomination, very important for this geographical area and of particular recognizability even at international level. The production of Red Wine Montefalco Riserva DOC originates from a refined and prestigious Blend of grapes grown within the company. Blend Sangiovese grapes are present at 70%, 15% Sagrantino grapes are present and Colorino grapes are present for the remaining 15%. For the production of the Montefalco Riserva DOC wine the harvest, differentiated according to the grapes present in the Blend, is carried out in a period between mid-September and mid-October. Always and only strictly by hand. The vinification is started with the maceration that lasts between a week after the harvest and two weeks starting from the first in which the maceration has started. Also in this case the period is dictated by the type of grapes treated. The process then takes place at a controlled temperature and varies according to the development phase. Temperature below 30°C during fermentation, then it goes down to temperatures between 25-28°C in the maceration phase with the skins, to finish at a temperature between 20-22°C to reach fermentation malolactic fermentation that is carried out naturally. To finish the refining phase it lasts 36 months, regulated and imposed by the production disciplinary. The articulation of the 36 months provides a period between 18 and 24 months to be spent in small wooden barrels while the remaining 12 months are spent in the bottle.
Characteristics of the Umbrian red wine Montefalco Rosso Riserva DOC
The organoleptic examination highlights the color, which in the case of Montefalco Rosso Riserva DOC is compact, intense ruby red with garnet reflections perceptible only in light. The nose returns a wide well-structured bouquet of ripe fruit with hints of black currant, raspberry and red berries, all embellished with spicy notes of pepper, thyme and vanilla perceptible especially in the finish. Finally, the taste is very powerful and full-bodied, the wine is broad, round and with excellent tannic structure.

The ideal pairings for the Montefalco Rosso Riserva DOC of the Perticaia cellar are those with structured dishes rich in flavors. It is excellent with red meats, game, cured meats and aged hard cheeses. It is suitable for long evolutions that last even for many years, improving the bouquet and refining itself in an excellent way. It is served at room temperature of up to 20°C in large glasses like the Grand Ballon type which favors oxygenation and diffusion of the fragrances. A brief decantation is recommended in the more aged versions.
