The history of this wine is linked to the lively wine-making reality of Langa. Everything starts at the end of the 1800s. The protagonists are Dr. Cappellano of Serralunga and Doctor Zabaldano of Monforte, who were able to apply, each according to their own formula, the much-vaunted properties of China Calissaia and Barolo, creating an elixir of immediate commercial fame and lasting fortunes to the interior of the rural culture of the region. After obtaining some market interest, Barolo Chinato knows the indifference of the decades following the second post-war period, precisely in correspondence with the crisis of peasant cultural models.

The formula applied by the Sordo winery, involves the use of a Barolo D.O.C.G. to which are added herbs, a dozen, carefully selected, and China Calissaia infused separately with pure alcohol.
