From the use of a blend of traditional grape varieties comes this traditional Venetian white wine which traces history and has its roots in the peasant population of the time. The grapes come from the Monteforte and Soave area on the Foscarino and Zoppega hills. The harvest takes place in September and is immediately followed by winemaking. The Anselmi winery is keen to point out that for the production of this label, the harvest is carried out manually using only the ripe, sparse bunches, followed by drying in airy rooms and alcoholic fermentation in oak barrels. Finally, the wine is aged for eight months in steel.
Characteristics of this Passito
On appearance the wine appears bright golden yellow with amber brushstrokes. The aroma is broad and varied as well as refined with aromas of dehydrated apricot, saffron, zagara honey, citrus peel, dried figs and custard. The taste is well balanced between sweetness and freshness, enveloping, intense and never cloying.
Recommended pairings when tasting the Passito "I Capitelli" from the Ansemi Winery
