Cantina Santadi's “Latinia” is a white wine made from overripe grapes, obtained from Nasco in purity, a native grape variety among the oldest in Sardinia, grown in the lower Sulcis area on loose, sandy soils. The harvest is late and is carried out between the end of September and the end of October, with repeated passages in the vineyard to collect only the bunches that have reached full overripeness. Fermentation takes place slowly in stainless steel tanks, given the high sugar concentration of the wort, which naturally tends to slow down and partly halt the process. The wine then ripens for a few months in third-pass French oak barriques before bottling.
Characteristics of this Sardinian wine
In the calyx it has an intense amber color and great density. On the nose it expresses a bouquet rich in honey, caramel, vanilla sugar and cloves, with an aromatic complexity typical of Mediterranean passiti. On the palate it is sweet but balanced, enveloping and persistent, with a closure that recalls floral notes of orange blossoms and a sweetness that is never cloying.
