“Calle” is one of the most distinctive red wines of Fasoli Gino's production and represents an intense and structured expression of the Merlot grown in the Veronese hills. It is made from selected organic Merlot grapes, sourced from vineyards located in the Illasi Valley, an area particularly suited to viticulture thanks to the combination of hilly soils and a favorable microclimate. Production follows a careful process that involves manual harvesting and partial drying of the grapes before winemaking, thus concentrating aromas and structure. Fermentation takes place in steel with prolonged macerations, followed by aging in French oak barriques for 24 months, which helps give complexity, roundness and evolutionary notes to the wine.
Characteristics of this wine from the Veneto
On organoleptic examination it appears with an intense and dense ruby red colour. The bouquet is rich and enveloping, with hints of ripe red fruit such as cherry and plum, accompanied by spicy notes, licorice, tobacco, cocoa and light toasted nuances. On the palate it is powerful, soft and velvety, with an important structure but well balanced by freshness and silky tannins.
Recommended pairings with this red wine from Fasoli Gino
It pairs perfectly with rich, flavorful dishes like braised meats, game, grilled red meats, and structured first courses. It is also ideal with aged cheeses and aromatic preparations of traditional Venetian cuisine. Serve at a temperature of 16-18°C.
