The Amarone della Valpolicella DOCG “Court of the Well” represents one of the most authentic and distinctive expressions of Veronese tradition, according to the production philosophy of Fasoli Gino, a historic family business oriented towards organic viticulture. This wine is made from native Corvina, Corvinone, and Rondinella grapes from selected vineyards in Valpolicella, grown on clay and limestone hillsides, characterized by excellent exposure and quality. Production follows the traditional wilting method: after manual harvesting, the sparser, riper bunches are placed in small crates and left to wilt for about 5–6 months in the fruit shop. This natural process concentrates sugars, flavors and structure. This is followed by a long fermentation in steel, with macerations lasting several weeks, and aging in oak barrels of at least 3 years, followed by further rest in the bottle before marketing.
Characteristics of this Amarone della Valpolicella
On organoleptic examination it appears with a deep red color tending towards garnet with aging. The bouquet is large and complex, with notes of ripe, underspirit fruit such as plum and cherry, enriched with sweet spices, cinnamon and cloves. On the palate it is full, structured and enveloping, with well-integrated tannins and an important alcoholic component, balanced by softness and long persistence.

Amarone “Corte del Pozzo” pairs perfectly with rich and structured dishes such as braised meats, game, important roasts and aged cheeses. It is also ideal in combination with more traditional preparations of Venetian cuisine and can accompany moments of meditation or end of meal. The recommended service temperature is 16–18 °C.
