Pieve Vecchia is one of the most representative wines of Fasoli Gino's production and is made from 100% Garganega grapes grown according to organic principles in the vineyards of the province of Verona. This wine expresses in a refined way the corporate philosophy, which combines respect for the territory, sustainable agriculture and the pursuit of qualitative excellence. The production is particularly accurate and detailed. The harvest takes place in three distinct steps: an early harvest to preserve freshness and acidity, one at full ripeness and a late one to obtain greater aromatic concentration. Fermentation starts in stainless steel and continues in oak tonneaux, where the wine ages for about 12–15 months on its own yeasts. This is followed by further refinement in the bottle for approximately 6 months, which contributes to its complexity and longevity.
Characteristics of this wine from the Veneto
On organoleptic examination it appears with an intense and bright golden yellow color. On the nose it offers a rich and complex bouquet, with notes of sweet spices, ripe white fruit, citrus, flowers such as honeysuckle and linden, along with toasted and slightly smoky notes. On the palate it is broad, enveloping and structured, but at the same time fresh and savoury, with a long finish characterised by almond notes and elegant roasts.

Pieve Vecchia pairs perfectly with structured dishes such as shellfish, baked or grilled fish, important risottos (especially with asparagus), white meats and aged cheeses. It is a wine that also lends itself to good aging potential, evolving positively over time. The recommended service temperature is 10–12 °C.
